Zone: 3 - 9 annual.
Sun/Shade: Full sun.
Spacing: 3 - 4 inches between plants and 12 - 24 inches between rows.
Depth: Sow seed 1/4 - 1/2 inch deep, thin to 4 inches apart when seedlings are 2 inches tall.
Spread: 10 - 12 inches.
Comments: Tender & juicy. Small, dark tops are sweet & edible. Tolerant to downy mildew. Resists bolting. Ruby red in color. Smooth skin. In hot, dry weather water enough to keep the soil moist and prevent plants from wilting. Plant in 2 - 3 week intervals to ensure a constant supply. For tasty beets harvest when roots are less the 2 inches across. Young beet roots and leaves are mild tasting. As beets mature, the flavor becomes stronger. Beets lose their color if peeled before cooking so cook them in their skins with a couple inches of stem on the root. A little vinegar or lemon juice added to the cooking water helps retain color. Apply a 10-10-10 fertilizer in the top 4 - 5 inches of soil prior to planting. Mulch with straw or hay to suppress weeds and helpsretain moisture.
