Prized heirloom with storied past

An heirloom variety famous for its bootleg whiskey past, Jimmy Red nearly went extinct in the early 2000s. But thanks to two remaining ears and seed saver Ted Chewning, this open-pollinated dent corn variety has made a welcome comeback. Jimmy Red is now thriving in the South and is used widely by chefs and distillers. The large, blood-red kernels have an unusually large germ (the oily center where the flavor resides). When dried and ground, Jimmy Red makes unforgettable, red-flecked grits with a wonderful nutty flavor. When distilled, it still makes a rich, smooth whiskey. Approx. 150 seeds per pkt. 90-115 DAYS.
